Taleggio DOP Bio

Aged by hands in our cellar in Val Taleggio over 40 days
This is a classic Taleggio cheese made with certified Oganic milk. The texture is firm and uniform in texture, with a color ranging from white to straw yellow. The extremely thin rind is rose-colored. The flavor is sweet, buttery and fragrant with a hint of acidity. This cheese is aged in our caves longer than the usual 35 days mandated by the consortium, and with each passing day this aging increases its buttery flavor, rendering it more intense and bringing out the truffle aftertaste. When ripening is complete, the cheeses are subjected to a careful selection process.
