The refinement with wine and pomace from the Rosengmuskateller gives the cheese a violet rind and characteristic fruity-floral notes. The refinement in the wine marc dates back to wartime. At that time, this valuable foodstuff was hidden under the marc to protect it from the looting of the soldiers. The aroma of the fruity pomace penetrates deep into the cheese, subtly rounding off the fine goat's cheese flavour.
