A mountain cheese with an orange-coloured rind and straw-yellow paste produced by young cheesemaker Stefan Köhl in Deutschnofen in the heart of the Dolomites at an altitude of 1,360 metres. The curd is cut into rice-sized pieces to produce a hard cheese with intense aromas from meadows and pastures.
