The semi-hard cheese is produced on the Gamsegghof, which has been owned by the Hohenegger family since 1702. Only organic raw milk is processed on the farm. This cheese is an assemblage of 80 % cow's milk, which gives it a full, balanced flavour, and 20 % goat's milk. The animals' feed is rich in aromatic plants, the fragrances of which pass into the milk. The cheese has an orange-coloured rind with scattered white colonies of noble mushrooms and a pale yellowish, elastic, creamy and firm paste with evenly distributed holes. Bunker ripening intensifies the spicy and grassy notes.
