The light wildflower honey is produced from March until the first ten days of June by bees who collect nectar from the flowers of the pastures and from the shrubs of the Mediterranean scrub of the Matera hills characterized by a very high biodiversity. The color has a golden tone if liquid, beige if it is crystallized. The smell is typical floral and fruity with a light pungent and fresh note. The flavor is sweet with aromatic perceptions characteristic of each species that composes it and which follow one another on the palate. Its aromatic facets make it combinable with all types of products from herbal teas to both fresh and mature cheeses.
