SULLA HONEY
Sulla honey is exclusive to central/southern Italy and is produced by bees collecting the nectar of the
flowers of the Hedysarum coronatium species from April to the first ten days of June in some suitable
pastures of the Matera hills, where this legume grows spontaneously. The color varies from light to
straw yellow when it is liquid, to white/beige when it is crystallized. Its flavor is sweet with a very faint
smell of dry hay, this makes it very welcome for sweetening herbal teas, desserts or for enjoying it with
fresh cheeses. It is also appreciated by those who do not prefer aromatic honeys.
