Citrus honey is harvested from April until the first ten days of May in the citrus groves of the Ionian belt. It derives from the nectar of different species of Citrus (orange, lemon, mandarin). The color varies from light to straw yellow when it is liquid, to white/pearl/beige when it is crystallized. Its flavor in the first months after harvest is fresh and reminiscent of orange blossom flowers, over time the aromatic note turns fruity. It can be used to sweeten herbal teas or desserts, especially ricotta-based ones, adding a very pleasant floral note and with fresh cheeses. Furthermore, in the kitchen it is used with extra virgin olive oil and lemon for salads and dips.
